How do I know the fish is cooked through?

Pull one stick and press a fork into the thickest part. If it flakes apart cleanly and looks opaque white all the way through, it's done. At 400F that's usually right around 12 to 15 minutes.

Can I fry these instead of baking?

Yes. Shallow-fry in about half an inch of oil at 350F for 2 to 3 minutes per side until golden. You'll get a crunchier shell, just drain them on a rack so the bottoms don't steam soft.

Can I bread them ahead of time?

Bread them and lay them on a tray in the fridge up to a few hours ahead; the chill even helps the coating set. For longer, freeze the breaded raw sticks on a tray, then bag them and bake straight from frozen, adding 4 to 5 minutes.

Mine came out pale instead of golden. What happened?

Not enough fat on the panko, almost every time. Spray or drizzle the tops until they look glossy rather than dry, and if they're still pale at the end, run them under the broiler for a minute or two.
